A Most Beautiful Tomato

October 2, 2019

Good morning.  It's really late, but I just did not want to get up this morning.  My little Pogo woke me up around 3 a.m. because he was hungry, and I couldn't get right back to sleep till after six a.m.

Last Thursday I ordered a few things from some catalogues and lo and behold, some of them arrived with my mail yesterday.  Wow!  Talk about great service!  I'm trying to finish up a lot of my Christmas shopping so that it can all be wrapped, tagged and ready for mailing early.  There will still be things that need to be bought much closer to Christmas, but every little bit wrapped now is a big help.

I promised to post a photo of my beautiful bountiful harvest from my tomato plants.  So here it is in all it's glory.  Now be honest, isn't this just a most beautiful tomato???  Of course it is, because I get to eat this one!

I had planned to fill a bag for Good Will yesterday, but somehow life did not want to cooperate.  So today I'm hoping to fill two bags.  I'm not sure how my days get away from me, but they do.  And the older I get, the more these days have a mind of their own.  I borrowed this cute little image from web because it fits me to a tee.

Since I've been doing so much more cooking, I've come up with a few recipes that are unique to me.  (and my scattered brain)   This isn't just for chicken.  I can do this with hamburger, eggs and steak too,   (image borrowed from web)

Today I think I'm going to attempt to cook a pizza again.  I have one left in the freezer, and I'm hoping to be able to eat all of it.  Not all at once though.  Half for one meal and half for another meal.  I tried this last week, and it was a disaster.  I was cutting the pizza in half, and one half fell to the floor.  Spinach and cheese side down of course!  Not only did I lose half of my pizza, but I had a mess to clean up too.

If I don't make the pizza for my supper, I might cook up some pasta.  I have a bowl of sauce (that I made before) in the freezer.  I also have some haddock filets in the freezer.  I may cook up one of the filets, place it on top of the pasta and cover it all with sauce.  Add a bit of grated parmesan cheese to the top of this and yum yum!

Oh dear, now I have to make a very difficult decision.  Shall I have pizza or pasta?  I guess I'll just wait and see how I'm feeling later when it's closer to supper time.  Whatever I don't have today, I'll have tomorrow.  At least that's the plan right now.

Now I'm off to make up a container of orange juice.  After that, I want to do a bit of blog reading before I get started on my Good Will bags.  So, till tomorrow, Y'all have a fantabulous day.

Hugs, Edna B.

That is a good looking tomato I'm sure you enjoyed eating it.
Our Goodwill left town a few months ago, I miss it :(

I am doing chicken breast.(fried) I think because I took them out of the freezer last night and they are still frozen. (lol) My sister is coming to Texas from Louisiana this weekend and I am preparing meals for them. She is hollering at me telling me not to be cooking all this food but I told her, we have to eat. (lol) That blackened chicken use to be my type of food. Now I use my small appliances, (air fryer, pressure cookers) etc to cook when I am not feeling well. So far it's been working out just fine. I am cooking corn bread stuffing with baked chicken, mustard and collard greens (separate) and shrimp Etoufe'. This should hold us until they leave on Sunday. I hope you and Pogo have a great day.

I came back to tell you my cooking today aren't going very well. I splashed the juices of my pan full of baked chicken all over the floor and myself. I burned my little tummy through my dress. (lol) oh well, this is what you get when you don't prepare meals this big. My sister have been calling me telling me to slow down but I refuse to tell her this pan of hot chicken have slowed me down. (laughing hard)Wish me luck. I will finish cooking the veggies and stuffing tomorrow. I have to do first aid on this tummy burn.
